Rodrigo Vásquez rolled the cart up Maple Street on a Tuesday in March 2013 with fifty pounds of marinated shoulder, a propane burner, and his mother's recipe card tucked in his front pocket. By noon he was sold out. By Thursday he had regulars.
The trompo hasn't stopped spinning since. The salsa verde — tomatillo, serrano, garlic, lime — gets crushed in the molcajete every hour. The tortillas are pressed by hand from masa that's been nixtamalized the night before. Nothing here is assembled; it's built.
